take my word for it wednesday.. it's my 4 year blogaversary!! lets re-visit one of my first posts.. breaking all the rules scrambled eggs!!!

 
 
 

 
 
ooooohhhhh emmmmmm geeee.. i can't believe i've been chronicling my culinary adventures for 4 years now!!! what is shocking to me more is that people actually read it!! one of my very first posts was this break'n all the rules scrambled eggs.. it's how we've made scrambled eggs for the past 30 years.. they are so creamy.. so fluffy.. so cheesy.. in a word.. delish!! { i know that isn't technically not a word but it described these eggs to the "t"} i have made these eggs for up to 30+ people and i didn't change the way i made them one bit.. lucky for me uncle jimmy has an egg pan that can hold up to 5 dozen eggs... they are so good you must try them!! excuse the pictures if you can believe it snowed in las vegas/boulder city and i made this scrumptious breakfast new years day and we ate outside admiring the white powdery stuff covering everything..
 
 

easy scrambled eggs
 
prep time: 2-3 minutes
cooking time: 5-7 minutes
servings: 2
ingredients:

4 large eggs
1 slice of american cheese
pat of butter
salt and pepper to taste
toppings:
 
jalapeno or regular ketchup
tobacco
 
directions:

melt your butter over medium heat then add your eggs {if you want to crack them into a separate bowl and add that way it's cool, but don't whip them before adding to the pan} once eggs are in the pan stir with either a fork or whisk, making sure the bottom doesn't stick.. after about a minute add the cheese in peices i just rip it and toss it in, drop the heat to medium low and keep stirring, it will start to set up, again don't let the bottom burn and get brown, just keep stirring {said in dory's voice from finding nemo} now add a little salt and pepper to taste.. once set remove and serve immediately.. i served it with sweet potato hash browns.. which were super yummy!! or mash them and the taters in a flour tortilla with a little cheese and have a breakfast burrito.. wowza it makes me hungry thinking of it!!
 
 
for new years dinner i made garlic crusted prime rib, baked potatoes, baked  white sweet potatoes, yorkshire pudding and creamed spinach.. talk about wow what a way to ring in the new year.. anyway i had left over sweet and regular baked potatoes and figured I'd make them into hash browns..
 
sweet potato "hash" browns
 
prep time: 10 minutes
cooking time: 20-25 minutes
servings: 2
 
ingredients:
 
1 baked potato cut into chunks
1 baked sweet potato cut into chunks {this is a little harder cause they are softer and kinda mushy but do your best}
1/2 a small onion, diced
1/2 a red, yellow, orange or green pepper, diced
olive oil
1/2 tsp. crushed red pepper {add more if you like it goes very well with the sweetness of the sweet potato}
salt and pepper
 
directions:
 
heat 2 twirls around an iron slillet of olive oil over medium heat.. add onion and peppers and cook until tender and translucent... add salt.. turn up the heat to medium high {you want the pan hot enough to "crisp" the potatoes but not burn} and add potatoes, salt, pepper and crushed red pepper and stir to incorporate everything.. then with the back if your spatula press them down... cook without stirring them for approximately 7-10 minutes.. midway check the underside and see that they are crisping and not burning.. once they get to the desired level of crispness flip them over and do the same to the other side.. once the other side is done remove and serve hot.. maybe even toss some cheese on them.. they go great in burritos or just like i served them.. perfect with scrambled eggs!!
