oven roasted salmon...plus a bonus.. left over salmon salad...
i had jake and sam over for dinner last week and jake is really liking salmon these days.. so i got some fillets and roasted them in the oven.. they were sooo good.. and the left over salmon made amazing salmon salad for lunch the next day.. i was inspired for this dish from a recipe found here.. you really can't go wrong with martha stewart on your side.. and it takes about 20 minutes to cook.. very easy and simple but ohh so delish..

oven roasted salmon
prep time: 5 minutes
cooking time: 20 minutes
servings: 6
ingredients:
1/2 cup low fat plain greek yogurt
2 tbls. dijon mustard
juice and zest of one lemon (plus extra lemon slices)
salt and pepper
8 salmon fillets
preheat oven to 450 degrees.. combine in a small mixing bowl the yogurt, mustard, salt, pepper and lemon juice/zest..place salmon, skin side down, on a lined rimed baking sheet..brush yogurt mixture over salmon add a slice of lemon to each fillet.. roast until opaque, about 17-20 minutes.. serve warm with roasted lemon slices..
so i wasn't going to take a picture of the salad.. but i was making pete's lunch and it looked so good i thought i would share.. i put mine on low calorie wheat bread.. ohh emmm geee.. it was so yummy.. great lunch..
left over salmon salad
servings: 2
ingredients:
zest and juice of 1/2 lemon
2 tblsp. fat free Greek yogurt
2 tblsp. olive oil light mayo
1/2 tsp. celery seed
salt and pepper
