throwback thursday.. velvetta pasghetti
throwback thursday is where i post a recipe from the archives.. and today's recipe is one of my alllllllllll time favorite dishes from my childhood!! i posted this back in october of 2011, original post here .. now the pictures are funky and i should update it with better photos {if shoulda woulda and coulda's were candy and nuts we could have a party as my dad would always say.. he he i have great dadisms.. i should share them with you one day..} anywayyyy despite the horrid photos the dish itself is the best.. now yes it has processed velvetta cheese and i know some people cringe at using it, but personally i don't mind it.. i really only use it in a few recipes.. a simple and quick one is this quick and easy mac n cheese or one of my other favorites is spicy chicken sausage cheesy pasta.. my grandpa aka daddybob would make us velvetta pasghetti when we stayed at he and mommabell's house when my brother and i were wee wittle tikes..*sigh* i just love when a dish brings back such fond wonderful memories.. and for that reason i am bringing back this recipe so those that didn't get a chance to try it will.. you will not be sorry i promise..
velvetta pasghetti
prep time: 5 minutes
cooking time: 45 minutes
serving: 4
ingredients:
1 package of spaghetti, cooked according to package directions
1 block of velvetta cheese, diced into chunks {i like to use the mexican flavored sometimes}
1 can of diced tomatoes, {mexican would be good with the mexican cheese or if not using the mexican cheese the italian tomatoes would be ideal}
2 cups cooked diced chicken, chicken from the deli would be just fine {optional..daddybob did not do this but pete refuses to eat a meal without some kind of meat, i opt to not put it in mine}
salt and pepper
{i sprinkled a little cayenne on mine for a little kick}
directions:
cook your pasta according to package, drain and put in a casserole dish that's been sprayed with pam.. add your tomatoes, cheese and chicken, if using.. toss with pasta to incorporate everything.. cover and bake in a 350 degree {f} oven for 30 minutes.. remove cover and stir to make sure all the creamy gooey cheese is over everything.. bake another 10-15 minutes uncovered.. scoop a healthy amount on to your plate.. salt and pepper.. serve with a salad and some crusty bread.. yummers!!
