take my word for it wednesday.. these baked "fried" green tomatoes are delish!!


i am so excited this year my garden is doing great!! i had some large green tomatoes and thought "fried" green tomatoes!! growing up my great aunt {which is mommabell's sister} nezzi always wanted to go to a restaurant called the hush puppy for her birthday.. there was a buffet and it always had fried green tomatoes.. I love love them.. and i loved those dinners.. one time i went to dinner there with my parents.. pete was out of town so it was just us 3.. i got up and went to the restroom and my dad ordered for me.. yumm this is good are they chicken wings?? umm no FROG LEGS!!!! gag, spit..huh? what? really? no way.. hmm ok.. taste like chicken.. gobble gobble.. ok these are really good.. my dad's been known to traumatize me this way before with food so i was not surprised.. he he
 
this recipe is simple.. they are not fried in oil but baked in the oven yet they come out crispy on the outside yet soft on the inside.. in a word?? delish.. ok i know that's not a word but it's fitting..


baked green tomatoes

prep time: 15 minutes
cooking time: 12-14 minutes
servings: 2

ingredients:

2 large green tomatoes 
olive oil
1 cup panko or regular breadcrumbs
1 tsp. cayenne
salt and pepper
pam
  
directions:

cut tomatoes in slices about a 1/4  inch thick.. in a flat pie dish or plate mix cayenne, salt and pepper with the panko or breadcrumbs and set aside.. spray a lined baking sheet with pam and heat your oven to 400 degrees (f).. brush each tomato slice with olive oil then dredge through the panko and place your tomato slice on the baking sheet.. once they are all panko'd/breadcrumb'd spray them with pam and put in the oven for about 30-40 minutes.. be sure to flip over half way through.. pay attention you want them crispy.. serve immediately... or on a blt.. yummy
