take my word for it wednesday..this "crunchy" bbq chicken is the best chicken ever!!
today is another day of take my word for it wednesday.. and like any other take my word for it wednesday i am asking you to forgive my shorting comings {and i don't mean because I am only 4" 11" he he}it's because the photos are awful and because i have been absent these past few weeks.. it's been crazy busy around here and i've been doing a lot of diy home projects that have taken my attention.. but i must confess the major reason **hanging head in shame** is i got a smart tv and for the first time in 30 years i have a tv in my bedroom and well i find I don't want to leave it and well holy moly i am loving me some netflix.. but i promise the newness of it all will fade and i will be back posting 4-5 times a week.. so with that out of the way let's get to this chicken.. oohheeemmmmggg was it good.. now you usually don't want the word "crunchy" in the title of bbq chicken.. it might, kinda, sorda imply burnt to a crisp.. but fear not my friends that is not the implication here!! this chicken is juicy, crunchy, sweet, spicy.. ohh so delicious!! and it's so simple you're going to think why in the world have i never made this before!! these are the new revolution of chicken fingers!!
crunchy bbq chicken
cooking time: 30 minutes
servings: 4
ingredients:
2 lbs boneless/skinless chicken tenders, thighs or breasts {i only had breasts so i used them and they were outstanding}
about a cup of honey bbq sauce {or whatever kind you like best, i used sweet baby rays}
3 cups panko breadcrumbs
1 tsbl. smokey paprika
2 tsp. cayenne {more if you like more heat}
salt and pepper
pam
extra bbq sauce for dipping and blue cheese or ranch dressing
directions:
in a flat pie dish or plate mix paprika, cayenne, salt and pepper with the panko bread crumbs and set aside.. spray a lined baking sheet with pam and heat your oven to 375 degrees (f).. brush each piece of chicken with a healthy amount of the bbq sauce then dredge through the panko and place your chicken on the baking sheet.. once they are all panko'd spray them with pam and put in the oven for about 30-40 minutes {depends on what type chicken you use and the chicken's thickness}.. be sure to flip over half way through.. pay attention you want them crispy but not rubbery.. serve immediately with extra bbq sauce and either blue cheese or ranch for dipping.. for lunch the next day i put it on little hawaiian slider rolls with extra bbq sauce.. very good..
