throwback thursday.. luscious pizza with garlic infused olive oil..
it's throwback thursday and i thought i would share a recipe from a year ago.. i am a pizza FANatic.. i mean i love everything about pizza and there are very few pizzas i don't like.. i do however especially love this one.. instead of a traditional red sauce i use a garlic infused olive oil {recipe for making your own garlic infused oil can be found here}
these pizzas are light, luscious, cheesy, garlicky.. in a word... yum!!!
asparagus spinach & garlic pizza
prep time: 15 minutes
cooking time: 7 minutes
servings: 1 pizza
ingredients:
pizza dough, cut in half, {my go to recipe that i use can be found here or a pre made pizza dough from the store is fine i recommend whole foods.. which is what i used this time}
1 cup of fresh grated mozzarella cheese
6 or 7 asparagus spears, woody ends removed and chopped
1 cup fresh spinach leaves
6-8 roasted garlic cloves
garlic oil {recipe for roasted garlic cloves and oil can be found here..}
fresh cracked black pepper
directions:
preheat your oven to 500 degrees (f) for 30 minutes with your pizza stone in the oven.. while it's heating up get a medium saute pan and heat two twirls around the pan with garlic olive oil over medium heat.. add your asparagus and cook for about 2 minutes then add your spinach and cook another 3-4 minutes.. remove from stove.. now cut the pizza dough in half {reserve other half for the sausage pizza below} and roll out one 1/2 of the dough on a floured surface to the thickness your family likes.. slide the pizza dough on to a piece of parchment paper..brush garlic olive oil all over dough and then add your fresh cracked black pepper.. now it's time to sprinkle your mozzarella.. then add spinach and asparagus and roasted garlic cloves over cheese. now pick up parchment and pizza and slide gently onto pizza stone.. bake until lightly brown and cheese is melted.. about 6-7 minutes.. but keep an eye on it the thin pizza cooks up pretty fast.. remove from oven and allow to cool for about 3-4 minutes. slice and serve..

2 hot italian sausage links, casing removed
garlic oil {recipe for roasted garlic cloves and oil can be found here..}
directions:
preheat your oven to 500 degrees (f) for 30 minutes with your pizza stone in the oven.. while it's heating up get a medium saute pan and cook your sausage until no longer pink and crumbly, remove from stove and set aside.. take your other half of the dough and roll out on a floured surface to the thickness your family likes.. slide the pizza dough on to a piece of parchment paper..brush garlic olive oil all over dough and then sprinkle your mozzarella all over.. add cooked italian sausage over the cheese... pick up parchment and pizza and slide gently onto pizza stone.. bake until lightly brown and cheese is melted.. about 6-7 minutes.. but keep an eye on it the thin pizza cooks up pretty fast.. remove from oven and allow to cool for about 3-4 minutes. slice and serve..
