peppered salisbury steak pasta with a chobani cream sauce {#madewithchobani project}

first off let me say it's always so nice to hear from you guys and some of you say the sweetest things and for that i appreciate your encouragement, comments, constructive criticisms, etc. the other day i got a fun email that chobani {ya know the awesome greek yogurt company} liked my page and asked if i could create a meal using their yogurt and share it with you and them {#madewithchobani project}.. the answer was of course yes.. i love their yogurt.. one of my favorite afternoon snacks is a chobani vanilla yogurt with about 12 chocolate chips tossed in!! umm yummm.. i also use is it in sauces and what not to add creaminess when i am trying to stay away from heavy cream or half and half.. it's a great substitute for sour cream as well...

coincidentally the  day i was asked to participate in the #madewithchobani project i was creating a new dish in my noggin!! lately after work i've been working on furniture projects and so the time spent in the kitchen has been reduced.. i had initially planned on making salisbury steak meatballs.. but then on  my way home i started thinking do i really want to go home and make meatballs?? and the answer was no, i had a headboard to paint {that project being posted next week} so i thought what if i just cooked the ground turkey with all the ingredients i would use for the meatballs toss it with some pasta and add a cream sauce.. and well guess what!! that's what i did and it was a huge success!! we both loved it.. and so easy..

peppered salisbury steak pasta with a chobani cream sauce
prep time: 5 minutes
cooking time: 30-40 minutes
servings: 4-6

1 onion, diced
1 lb. ground turkey {or beef}
1 tblsp. mustard
1 tblsp. spicy ketchup {regular is ok too}
1/2 tblsp. worcestershire sauce
salt and pepper to taste
olive oil


1/2 cup chicken broth {you might need to add a skosh more start with 1/2 cup and see}
1/2 tblsp. worcestershire sauce
1 cup chobani greek yogurt

2 cups macaroni cooked to package directions {i used small shells}
minced fresh parsley {garnish/optional}
salt and pepper


heat two twirls around the pan of olive oil over medium heat in a large skillet.. once olive oil is hot add onions and a dash of salt and cook until tender.. about 4 minutes.. add ground meat and cook until no longer pink.. then add salt, pepper, worcestershire, ketchup and mustard.. mix well.. in a small mixing bowl combine chicken broth, worcestershire sauce and yogurt and whisk together.. then add chobani greek yogurt/chicken broth to the pan.. stir until everything is well combined.. add your cooked noodles and about 3 tsp. of pepper {hence the name peppered pasta} the peppery taste goes very well with the creaminess of the yogurt.. reduce the heat to simmer and cook another 15 or so minutes so that everything has a chance to meld and get all cozy and comfortable together...... once well combined and everything is heated through sprinkle with parsley and serve in a big bowl.. {if you don't like pepper or at least not that much you do not need to add it.. it's a personal preference..}

throwback thursday.. crunchy bbq chicken

today is throwback thursday!! i am  sharing with you today one of my favorite chicken dishes.. it's so  easy!! it's perfect for a quick weeknight meal or if you cut them up and served them as nuggets or bites they'd be perfect for football party!! :)

crunchy bbq chicken

prep time: 10 minutes
cooking time: 30 minutes
servings: 4-6
2 lbs boneless/skinless chicken tenders, thighs or breasts {i only had breasts so i used them and they were outstanding}
about a cup of honey bbq sauce {or whatever kind you like best, i used sweet baby rays}
3 cups panko breadcrumbs
1/2 tblsp. smokey paprika
2 tsp. cayenne {more if you like more heat}
salt and pepper
extra bbq sauce for dipping and blue cheese or ranch dressing
in a flat pie dish or plate mix paprika, cayenne, salt and pepper with the panko bread crumbs and set aside.. spray a lined baking sheet with pam and heat your oven to 375 degrees (f).. brush each piece of chicken with a healthy amount of the bbq sauce then dredge through the panko and place your chicken on the baking sheet.. once they are all panko'd spray them with pam and put in the oven for about 30-40 minutes {depends on what type chicken you use and the chicken's thickness}.. be sure to flip over half way through.. pay attention you want them crispy but not rubbery.. serve immediately with extra bbq sauce and either blue cheese or ranch for dipping.. for lunch the next day i put it on little hawaiian slider rolls with extra bbq sauce.. very good..

take my word for it wednesday.. it's my 4 year blogaversary!! lets re-visit one of my first posts.. breaking all the rules scrambled eggs!!!


ooooohhhhh emmmmmm geeee.. i can't believe i've been chronicling my culinary adventures for 4 years now!!! what is shocking to me more is that people actually read it!! one of my very first posts was this break'n all the rules scrambled eggs.. it's how we've made scrambled eggs for the past 30 years.. they are so creamy.. so fluffy.. so cheesy.. in a word.. delish!! { i know that isn't technically not a word but it described these eggs to the "t"} i have made these eggs for up to 30+ people and i didn't change the way i made them one bit.. lucky for me uncle jimmy has an egg pan that can hold up to 5 dozen eggs... they are so good you must try them!! excuse the pictures if you can believe it snowed in las vegas/boulder city and i made this scrumptious breakfast new years day and we ate outside admiring the white powdery stuff covering everything..

easy scrambled eggs
prep time: 2-3 minutes
cooking time: 5-7 minutes
servings: 2

4 large eggs
1 slice of american cheese
pat of butter
salt and pepper to taste
jalapeno or regular ketchup

melt your butter over medium heat then add your eggs {if you want to crack them into a separate bowl and add that way it's cool, but don't whip them before adding to the pan} once eggs are in the pan stir with either a fork or whisk, making sure the bottom doesn't stick.. after about a minute add the cheese in peices i just rip it and toss it in, drop the heat to medium low and keep stirring, it will start to set up, again don't let the bottom burn and get brown, just keep stirring {said in dory's voice from finding nemo} now add a little salt and pepper to taste.. once set remove and serve immediately.. i served it with sweet potato hash browns.. which were super yummy!! or mash them and the taters in a flour tortilla with a little cheese and have a breakfast burrito.. wowza it makes me hungry thinking of it!!
for new years dinner i made garlic crusted prime rib, baked potatoes, baked  white sweet potatoes, yorkshire pudding and creamed spinach.. talk about wow what a way to ring in the new year.. anyway i had left over sweet and regular baked potatoes and figured I'd make them into hash browns..
sweet potato "hash" browns
prep time: 10 minutes
cooking time: 20-25 minutes
servings: 2
1 baked potato cut into chunks
1 baked sweet potato cut into chunks {this is a little harder cause they are softer and kinda mushy but do your best}
1/2 a small onion, diced
1/2 a red, yellow, orange or green pepper, diced
olive oil
1/2 tsp. crushed red pepper {add more if you like it goes very well with the sweetness of the sweet potato}
salt and pepper
heat 2 twirls around an iron slillet of olive oil over medium heat.. add onion and peppers and cook until tender and translucent... add salt.. turn up the heat to medium high {you want the pan hot enough to "crisp" the potatoes but not burn} and add potatoes, salt, pepper and crushed red pepper and stir to incorporate everything.. then with the back if your spatula press them down... cook without stirring them for approximately 7-10 minutes.. midway check the underside and see that they are crisping and not burning.. once they get to the desired level of crispness flip them over and do the same to the other side.. once the other side is done remove and serve hot.. maybe even toss some cheese on them.. they go great in burritos or just like i served them.. perfect with scrambled eggs!!

throwback thursday.. luscious pizza with garlic infused olive oil..

 it's throwback thursday and i thought i would share a recipe from a year ago.. i am a pizza FANatic.. i mean i love everything about pizza and there are very few pizzas i don't like.. i do however especially love this one.. instead of a traditional red sauce i use a garlic infused olive oil {recipe for making your own garlic infused oil can be found here}
these pizzas are light, luscious, cheesy, garlicky.. in a word... yum!!!

asparagus spinach & garlic pizza

prep time: 15 minutes
cooking time: 7 minutes
servings: 1 pizza

pizza dough, cut in half, {my go to recipe that i use can be found here or a pre made pizza dough from the store is fine i recommend whole foods.. which is what i used this time}
1 cup of fresh grated mozzarella cheese
6 or 7 asparagus spears, woody ends removed and chopped
1 cup fresh spinach leaves
6-8 roasted garlic cloves
garlic oil {recipe for roasted garlic cloves and oil can be found here..}
fresh cracked black pepper

preheat your oven to 500 degrees (f) for 30 minutes with your pizza stone in the oven.. while it's heating up get a medium saute pan and heat two twirls around the pan with garlic olive oil over medium heat.. add your asparagus and cook for about 2 minutes then add your spinach and cook another 3-4 minutes.. remove from stove.. now cut the pizza dough in half {reserve other half for the sausage pizza below} and roll out one 1/2 of the dough on a floured surface to the thickness your family likes.. slide the pizza dough on to a piece of parchment paper..brush garlic olive oil all over dough and then add your fresh cracked black pepper.. now it's time to sprinkle your mozzarella.. then add spinach and asparagus and roasted garlic cloves over cheese. now pick up parchment and pizza and slide gently onto pizza stone.. bake until lightly brown and cheese is melted.. about 6-7 minutes.. but keep an eye on it the thin pizza cooks up pretty fast.. remove from oven and allow to cool for about 3-4 minutes. slice and serve..

hot italian sausage pizza

prep time: 15 minutes
cooking time: 7 minutes
servings: 1 pizza

2 hot italian sausage links, casing removed
garlic oil {recipe for roasted garlic cloves and oil can be found here..}


preheat your oven to 500 degrees (f) for 30 minutes with your pizza stone in the oven.. while it's heating up get a medium saute pan and cook your sausage until no longer pink and crumbly, remove from stove and set aside..  take your other half of the dough and roll out on a floured surface to the thickness your family likes.. slide the pizza dough on to a piece of parchment paper..brush garlic olive oil all over dough and then sprinkle your mozzarella all over.. add cooked italian sausage over the cheese... pick up parchment and pizza and slide gently onto pizza stone.. bake until lightly brown and cheese is melted.. about 6-7 minutes.. but keep an eye on it the thin pizza cooks up pretty fast.. remove from oven and allow to cool for about 3-4 minutes. slice and serve..

take my word for it wednesday.. these spicy sweet potato parmesan stacks are amazing.. and so easy..


i was never a sweet potato kinda person.. except of course for grandmommy's sweet potato casserole.. other than my once a year treat at thanksgiving i never ate sweet potatoes.. then a few years back i tried sweet potato fries.. ohh yumm.. but never a baked sweet potato or anything like that.. then about a month ago pete bought white sweet potatoes and i baked them.. holy moly were they good!! they didn't even need butter..they were so good.. so decided to venture out a little bit and try some other recipes calling for sweet potatoes but to use the white sweet potatoes.. these little stacks are ridiculously good.. so easy but so good. i came across this recipe rosemary sweet potato stackers and knew i wanted to make my own version of them.. and boy did they turn out good..

spicy sweet potato parmesan stacks
prep time: 10 minutes
cooking time: 35-40 minutes
servings: 4-6
2 white sweet potatoes, thinly sliced
2 tblsp. butter, melted
2 tblsp. grated parmesan cheese
1 tsp. chopped thyme
1/2 - 1 tsp. crushed red pepper {depending on how hot you like things... i go for the full 1 tsp.. maybe more *smile*}
preheat oven to 375 degrees.. spray a standard 12 cup standard muffin tin with pam or another non stick cooking spray.. slice your potatoes.. a mandolin works best here.. in a large mixing bowl combine melted butter, parmesan, thyme, red pepper and salt.. add sliced potatoes.. toss to evenly coat.. layer the potato slices into the muffin cups and fill to the top.. give each a quick shot of the pam or non stick cooking spray.. bake for 35-40 minutes or until golden brown and starting to get crispy.. remove from oven and allow to sit for 3-5 minutes before serving.. add additional thyme and parmesan if desired right before serving.. soo good!! {they were good with spicy ketchup too} *i'[ve made them a few different ways too.. i've alternated between regular russet potatoes and sweet potatoes and recently for breakfast i cubed up the sweet potatoes tossed in the same ingredients and roasted them.. super good*

make over monday! our little cottage in the woods..

happy happy 2015!! i hope everyone's holiday was magical and filled with family and friends.. we've been busy in the gullo household and below is a little bit of what we've been doing.. we bought a "weekend/retirement" home recently in a  small town called williams, arizona, population 3000 {now 3002} ha ha . it is the gateway to the grand canyon.. cutest little town ever.. we bought on the outskirts in the "woods".. we absolutely love it.. it's so cute.. we are about 26 miles from the grand canyon..
 now the first several photos are of what the house looked before we bought it.. this was from the first time we saw it and if you can believe despite all the clutter i absolutely loved it.. her decorating ideas and taste differ from mine and i haven't figured out why there were so many mirrors everywhere but oh well.. i wanted you to see the changes we've made.. so get comfy and let's jump right in.. comments, suggestions, ideas, etc. are welcomed..

when they moved out they took all the fixtures and window covers, they weren't supposed to but did..

this is the extra room.. there was sooo much stuff.. 

the bathroom was filled with stuff and hardly an inch of wall space was vacant..

let me tell you for the house only being 900 sq. feet they utilized every inch of space.. 

moving in day..

we brought up this table and chairs that i painted with the chalk paint.. we sit on over an acre and the back patio is awesome.. i love it and our view is breathtaking..

our first snow fall..

we thought we'd keep the yellow paint until we saw what a horrible job they did and all the holes.. when they painted they didn't cover anything up painted right over fixtures, the smoke detector, etc.. we've got a lot of painting to do.. as you can see they took the fixtures and window covers. they even took the fridge and a garage we had out back.. augh what a nightmare the day we tried to move in.. luckily it all worked out..

this is the corner of the master bedroom.. i was almost sad to put up sheers over the windows because the view of our first sunset was amazing..

this is the extra bedroom.. looks a lot different without all that stuff, huh?

i just love this kitchen..

ok so we are starting to put our stamp on the house.. we picked up this chair from pete's brother.. i ordered a cover and it's way toooooo big but that's ok..  we starting painting the walls with kilz and will paint with a light buttercream yellow.. we picked up that coffee table for 20 bucks.. sanded it down stained and painted it, the end tables i got for 5.00 and stained them and i think i am going to add some paint to them this one color just isn't for me.. 

we got this amazing marble table from pete's dad.. it was in the tropicana hotel in the 60's, unfortunately once we got all the dish paraphernalia  on it it just wont' work as a tv stand.. but never fear it's going somewhere in the house.. the ladder we used to hold the cabinet doors while drying..  

so we've begun changing the kitchen.. we painted the upper cabinets in a pure white and the walls a lemon yellow.. the bottom cabinets are going to painted a rich navy blue.. i want to get an industrial looking light for over the sink.

the bathroom was scary!! we are going to do a wainscoting with beadboard on the bottom half of the walls and a light yellow or white on the top.. pete removed the cabinets doors and built new ones with beadbaord,.. {i'll show you those hopefully next week} 

we picked up a dresser off a yard sale face book page and converted it into a console.  i am going to make a faux back to cover the holes and wires that was bugging me all weekend.. ha ha {the house is in total disarray and the walls are every color in the rainbow but seeing those holes and wires is what bugged me.. yeah pete thinks i am weird too} 

this is the master bedroom!! i picked the chair up for a buck.. i don't like it's color and will re paint it.. the vanity i got from sam's sister.. the "dresser" in the corner is actually a metal chest of drawers that came out of the hospital in boulder city in the 60's.. it's awesome!!!!!

the little night stand i picked up at savers for a few bucks and painted it..i bought a headboard at a yard sale for 10 bucks and brought it home and painted it, i love love it.. unfortunately it's a king and our bed is a queen so jake and sam got a new headboard.. and pete got a raised panel door which we will paint and convert into a headboard.. {that's my project for this week so hopefully i can share with you soon}we are going to paint these walls either a white or very light yellow..

we've started the re do on the bathroom.. yeah that color of yellow on the walls didn't cut the mustard.. ha ha get it..because well it looks like mustard.. ha :) we are going  with a very light yellow or white..

here is the extra bedroom.. its kinda beachy, coastal inspired.. i thought you could get the best of both worlds in this room.. beachy casual fun while in the beautiful snowy mountains.. the headboard for this room is going to be old shutters we are going to upcycle into a headboard.. stay tuned for that.. the end table was one pete's sister had outside to donate.. we rescued it and painted it and i just love it.. it's one heavy little thing!!

i just love the light in the kitchen..

one of my favorite refurbished pieces is the kitchen table.. it's an antique thresser table we got from a used furniture store.. i stained the top and painted the legs.. i love love it.. now for the chairs *insert sad face here*.. i picked them at a vintage store in boulder for 5 bucks each.. i painted the fabric on one of them with annie sloan pure white and the legs with annie sloan blue.. it turned out great.. then i got side tracked and left it outside while it was drying and we had an unexpected down pour.. i couldn't save it well at least not without some help.. so i ordered chair covers and they are working out great.. {for now} i don't like the blue legs with the chair covers so i will change that very soon too!! 

 well there you have it.. so far.. it needs a lot and we are looking forward to all the projects it holds.. we still need a couch and some other key pieces of furniture but we don't want to rush and buy something that doesn't work up for now every weekend it will get a little change. a little sprucing up.. a little love.. then when the weather warms up the property will get an overhaul.. ohh the possibilities are endless!! i might finally get that pizza oven i've been dying for..
