cheesy cauliflower patties
these are my new favorite appetizers/side dish.. i had an impromptu dinner party with the kids and my niece and nephews and had some cauliflower so i whipped these up.. they were a huge hit.. then it was my dad's b day this past weekend and we had a wonderful dinner party so i decided to make them again as our appetizer.. they are very good and so easy..
the first few times i made them i cooked them in the iron skillet but the last 2 times i have made them i baked them in the oven since i was making so many.. they were equally crisp.. so whatever way you want to cook them i think they would be fine..
next time i am going to add some shredded zucchini or corn.. maybe serve with a salad and have a meatless monday meal..
cheesy cauliflower patties
prep time: 15 minutes
cooking time: 6-8 minutes if cooking on the stove and about 20 minutes in the oven
servings: 8 patties {for the party i made smaller ones and got about 24 appetizers}
ingredients:
1 large cauliflower
2 eggs
1/2 cup shredded cheddar cheese
1/4 cup grated parmesan
1/2 cup panko bread crumbs
salt and pepper
oil
directions:
cut cauliflower into florets and add to a zip lock bag and zap in the microwave for 4-5 minutes... allow to cool in the microwave oven for 1-2 minutes after cooking {the bag will be hot} remove from microwave and add to a large mixing bowl.. mash cauliflower while still hot... {you can also at this point run it through a food processor also} add cheese, eggs, panko, salt and pepper... coat the bottom of an iron skillet with a little oil and heat over medium high heat.. form the cauliflower mixture into patties.. cook until golden brown, about 3-4 minutes per side.. if cooking in the oven cover your baking sheet with foil and spray with pam add your patties and spray each one with pam.. heat your oven to 400 degrees {f} and cook patties for 10 minutes them flip them over and cook another 10 minutes.. again your looking for them to golden brown.. serve with sour cream.. yumm.. they make a great side dish and the smaller ones make a great side to burgers..{i didn't have cauliflower one night and pete wanted these so i made them with broccoli.. since broccoli doesn't "mash" very well i chopped it pretty fine after steaming it.. but everything else was the same..}
