spicy buttermilk onion rings w/ spicy dipping sauce..


i had my cousins over for dinner on saturday night!! they are starting a little side business which i think is amazing, genius, brilliant, life changing.. well at least for me it was.. you see they will come to your house and make sure all your electronics and computers are working.. working properly and that you are using your equipment to the best it has to offer.. my dvd player stopped working.. i could hear it but not see it.. apparently a switch was turned to the wrong thing.. but you see i wouldn't/didn't even know where to look.. so they fixed that.. also i guess when we bought it we never hooked it up for the blue ray so they fixed that.. my sling box which is the most amazing thing ever... is now hooked up.. which means i can watch anything that's recorded on my dvr now on my tablet.. sweet jesus that makes me happy..we now have the surround sound working properly.. we have one universal remote.. etc.. sooooooooooo i was so happy they came over and got everything working.. 


now your probably wondering what does onion rings have to do that.. you might even be thinking i made these for them when they came over.. however you would be wrong.. i intended on making them that night, i even bought all the ingredients and sadly time slipped away and i didn't get a chance to make them.. but i woke up the next day craving them so i made them, pete said what's the occasion, no occasion just a craving.. he said i won't argue with that...


i was inspired by this recipe here.. check her site out she gives picture instructions also .....they are so good... so simple.. so delicate.. so crunchy.. a tad bit spicy... the dipping sauce was creamy with a hint of spice too..i can't wait to make them again..


spicy buttermilk onion rings

prep time: 20 minutes
cooking time: 3-4 minutes per ring
servings: 4 (makes about 16-18 rings)

ingredients:

1 large sweet onion cut into 1/4 inch rings
1 1/2 cups low fat buttermilk
1/2 tsp. sea salt
4 tblsp. tobasco
2 cups ap flour
2-3 tsp. cayenne pepper
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic powder
vegetable oil

place onion ring slices in a medium mixing bowl and toss with salt and hot sauce.. then pour in buttermilk.. submerge the onions in the mixture and allow onions to soak in the buttermilk for about 20 minutes..

in a shallow dish, i used a pie plate, mix together your flour, cayenne pepper, salt, pepper and garlic powder.. line a baking sheet with a layer of paper towels.. in a large cast iron skillet add enough oil until reaches about 3 inches up the sides.. heat your oil over high you want it to be about 360 degrees...when the oil is hot, remove the onion rings from buttermilk and transfer them to your flour mixture dredging them on both sides until coated.. gently place in the hot oil and cook until light golden brown on both sides.. about a total of 3 minutes and turning 1/2 way through.. just kind of gage it and pay attention.. transfer the onion rings to the paper towel lined baking sheet.. repeat until all the onion rings are done..



spicy dipping sauce:

1/4 cup non fat greek yogurt
1/4 light mayo
salt and pepper
1 tsp. lemon juice
3 tblsp. buttermilk
2 tsp. paprika
1 tsp. dill
1/2 tblsp. sriracha

mix all together and keep in the fridge in an air tight container until ready to use
