take my word for it wednesday.. these steamed clams with "fried" spaghetti were da bomb.com

 
 

soooo this happened and take my word for it it HURT.. i was making these spicy sweet potato stacks the other night and was not paying attention and i sliced off the tip/finger pad of my finger.. wowzer did it hurt and typing is challenging!! be very very careful when using a mandolin.  ok now on to the dish.. sam ordered this dish years ago at a little bistro in town and ever since then i always order them whenever we go and i love love them.. well clams were on sale at the local market and i decided i would try my hand at making them.. let me tell you they were delicious. next time you see fresh clams you need to try this dish!!


starts off with a little bacon and wine... umm helloooooooo.. *knock knock on screen* did you hear that.. bacon and wine.. if i don't have your attention now i never will :/.. 


"fried spaghetti" is left over spaghetti noodles sautéed in a little olive oil, salt, pepper, garlic and crushed red pepper... yum!!



steamed clams

prep time: 10-15 minutes
cooking time: 10-12 minutes
servings: 2

ingredients:

3 strips of bacon cut into lardons
3 cloves fresh garlic, minced
1/2 cup dry white wine
2 pounds of clams, rinsed and cleaned
3 tablespoons fresh parsley, chopped

*optional 1 small lemon cut into wedges
cooked "fried spaghetti" as mentioned above  {if you don't want them served over pasta they are just as yummy without it}
crusty bread is a must though to "sop" up the broth

directions:

over medium heat in a large skillet with cover cook bacon until rendered down and just before crispy.. add garlic and cook for 2-3 minutes until garlic is fragrant but not burned.. add wine and crank up heat to medium-high until wine is brought to a simmering boil.. add clams and cooked covered for 5-7 minutes, stirring occasionally, until clams have opened.  toss out any clams that didn't open. add parsley... pour clams and broth to a large serving bowl over "fried spaghetti", serve with lemon wedges on the side and crusty bread.. we had jake and sam over for dinner the night i served this and sam it was as good if not better than the one from the local bistro..
