paprika pan roasted potatoes
so i was inspired to make these potatoes here.. and thought they sounded so yummy.. and well.. guess what.. i was right.. i served them with a grilled strip steak and salad.. very nice quick easy weeknight dinner..
smoky paprika pan roasted potatoes..
prep time: 10 minutes
cooking time: 50 minutes
servings: approx. 4-6
ingredients:
1 lb. baby/small white potatoes, scrubbed and halved
olive oil
2 cloves of garlic, minced
1 tablespoon smokey paprika (i like the hot kind)
1 cup chicken broth
salt and pepper
twice around the pan with the olive oil.. heat the pan to medium heat.. once pan is hot add garlic and 1/2 of the paprika and cook until fragrant.. (this is called blooming the spice) (about 1-2 minutes) add broth and the potatoes, salt and pepper. reduce heat to medium low and cook, covered, until potatoes are tender, approx. 12-15 minutes. remove lid and increase heat back up to medium. cook, stirring occasionally until the liquid evaporates.. approx. 5-8 minutes. whisk 2 tbls. of olive oil and the other 1/2 of the paprika in small bowl.. add paprika mixture to the pan and cook, stirring every so often.. potatoes will start to brown until for another 5 minutes.. salt and pepper and serve..
