vietnamese "style" pickled carrots and daikon
i got some fun carrots at whole foods the other day.. and I found this recipe here while on pinterest and decided this would be the perfect recipe to to showcase how pretty they are..
when shell saw these carrots she thought i was using rotten ones and decided she woud not be eating anything i made with them.. so i had to convince her they in fact where not rotten but fun and funky.. she rolled her eyes at me and called me strange.. *welcome to my world* ha
once you cut into them the insides are kinda orangish.. but i do think it's pretty and ohh my where they yummy..
vietnamese "style" pickled carrots & daikon
ingredients:
1/2 lb. daikon, peeled and cut into sticks
1/2 lb. large carrots, peeled and cut into sticks
1 tsp. kosher salt
1 cup rice wine vinegar
2 tbslp. sugar {or splenda or agave}
1 cup water
directions:
wash daikon and carrots peel and cut into sticks.. in a mixing bowl combine vinegar, salt, sweetner and water until the sweetner has disolved.. add carrots and daikon to a jar and pour mixture over veggies.. store in an airtight container for up to 2 weeks in the fridge... can be used after 3-4 hours of "pickling".. yummy chopped up on tacos, in burritos or even in salads.. or just to munch on..
