take my word it.. these potatoes are super easy but ohh so tasty.. you can change up the herbs.. i happen to like thyme and right now i have a ton of it in my herb garden.. i am not a rosemary person.. i don't like the taste and i can't stand the smell.. basically i grew up with it growing all around our house.. our pool outback was so beautiful and along an entire wall was rosemary plants and on saturday's my dad would trim the rosemary.. and let me tell you to much of a good thing can be a bad thing.. on a hot summer vegas day the smell of rosemary was so overwhelming blah.. i don't grow it and don't use it.. butttttttt if you like rosemary i am sure it would be wonderful on these potatoes.. we had them with rib eyes.. but i think these would be perfect as a side to any protein..

update: i have received emails and a few text messages about my upcoming surgery.. and while it's not major it is a little scary.. and all my fault.. this might be tmi so scroll down if you don't want to know ha.. i got an iud 17 years ago.. {apparently your only supposed to have them for 7 years} anyway it's causing horrible pain, like labor pain pain.. yep i have felt like i've been in labor for 4 months.. talk about c r a n k y!!! anyway they have to remove it and after 3 attempts at the simple easy way it would not budge.. so surgery it is.. wam bam thank you mam.. 2 day recovery and i should be good to do.. and thank you for the concern :)


thyme roasted fingerling potatoes

prep time: 5 minutes
cooking time: 40 minutes
servings: 4

ingredients:

1 lb. fingerling potatoes
6 sprigs fresh thyme, chopped
2-3 garlic cloves, minced
olive oil
salt and pepper

directions:

pre heat oven to 400 degrees.. cover a baking sheet with foil.. add your potatoes and drizzle with olive oil.. salt and pepper.. with our hands toss potatoes to make sure they are evenly coated in the oil, salt and pepper.. place baking sheet in oven and cook for 20 minutes.. remove from oven and sprinkle with chopped fresh thyme.. with a spatula toss potatoes around to make sure even coated with the thyme.. place back in the oven and cook for another 20 minutes or until fork tender and slightly crispy on the outside.. remove from oven and serve immediately.. {i served with a little spicy ketchup.. which is 2 tblsp. ketchup and 1 tblsp. sriracha.. yummy}
