greek turkey meatballs with tzatziki



i really wanted to make lamb gyros but after 3 stores i couldn't find ground lamb.. so i decided tonights dinner would be turkey greek meatballs with tzatziki (which i love) in nan bread.. it was really good but i would use pita instead of nan the nan was kinda thick.. and the tzatziki i would make a triple batch and put it on everything, it was wonderful.. trying to lose weight? eliminate the bread and use whole wheat bread crumbs or rolled oats..i bet it would be really good in a lettuce wrap or made as as slider.. hmm might have to try one those next week.

Meatball
        
·         1 ½ lb ground turkey
·         ½ cup dry bread crumbs
·          ½ cup plain Greek yogurt
·         1 clove garlic minced
·         1 large egg
·         1 Tbsp lemon zest plus the juice of  ½ of the lemon
·         ½ Tbsp oregano
·         ½ tsp kosher salt
·         ½ tsp fresh black pepper
·         1 tsp olive oil
·         1-2 Tbsp flat-leaf parsley, roughly chopped


preheat oven to 425°. Line a rimmed baking sheet with a silicone liner if you have one if not then aluminum foil or even parchment paper, and set aside. then in a large mixing bowl, combine all ingredients. With your hands, mix until well combined, with the breadcrumbs and yogurt evenly distributed throughout. wet your hands with water, and form the turkey mixture into 24 meatballs… place on the prepared baking sheet, and bake for 15 -25 minutes, until just slightly brown. you might want to taste one to be sure they're done.. serve in a pita or nan bread like i did.. garlic nan to be exact.. and i served with lettuce, tomato, feta cheese, sliced red onion and tzatziki sauce.. (recipe below) or you can remove the bread all together and make a salad using the tzatziki as your dressing..

tzatziki sauce

2 cups greek yogurt
1 clove garlic, minced
1 cup cucumber, seeded and diced
1/2 tsp. olive oil
1 tblsp. fresh parsley
the juice of 1/2 a lemon
salt and pper to taste

in a small mixing bowl combine all ingredients and mix well.  cover and chill in fridge for 1 hour before serving..
