pork chops with peach onion marmellata

i ended up catching the cold from hell.. *cough cough* *sneeze sneeze* don't worry I washed and sanitized my hands.. dinners where not over the top this week but simple things i could make in between "napping" on the couch.. there are no pictures i was to exhausted after dinner to take any.. and my dishwasher died on top of all my things happening this weekend so what is normally a kaotic kitchen is down right out of control right now.. but no worries i am feeling better and dishwasher should be fixed soon so we should be back to normal next week.

peach onion marmellata (recipe inspired/adopted from here)

prep time: 15 minutes
cooking time: 2 1/2 hours
servings: 4-6

ingredients:

olive oil
3 sweet onions, sliced thin
1/2 jar of sugar free peach jam (or regular jam)
1 tblsp. chopped fresh thyme
salt and pepper to taste
2 tblsp. balsamic vinegar
1 tblsp. splenda (or sugar)

in a heavy pot over medium high heat twirl your olive 2-3 times around pan.. add onions.. combine onions and oil cook for about4 minutes.. add remaining ingredients.. reduced heat to low.. cover pot and cook on low for 2 hours, stirring every 30 minutes to scrape up any bits that form on the bottom.. the onions should be soft, jam like consistency..

pork chops

prep time: 5 minutes
cooking time: 14 minutes
servings: 4-6

ingredients:

1 tblsp. chopped fresh thyme
2 cloves of minced garlic
salt and pepper to taste
6 pork chops

combine thyme, garlic, salt and pepper in a small bowl.. using your fingers work all the ingredients together until well combined.  rub the mixture over the chops then cover with plastic wrap and keep in fridge until about 30 minutes before onions are done.. take out of fridge and heat your gas grill to medium high heat..cook the chops about 7 minutes on each side depending on the thickness.. you want them to be medium.. remove from grill when done and place on a platter.. spoon peach onion marmella over chops.. serve..  it's yummy
