grilled grape pizza..


i have mentioned a time or two i love pizza.. and i might have mentioned i love the food network and cooking channel.. it's basically the only reality tv i watch.. well they did a show on the history of pizza and they showed a pizza with grapes on it.. and while i thought it sounded amazing.. pete did not.. so pete didn't get either pizza above.. they were mine and shells.. he he 

many many years ago.. probably 10 or so i made my first grilled pizza and shell fell in love.. (jake did not) and for several years after that i was making them probably once a month or more.. then i stopped, not sure why but i hadn't made one in years uptil this year.. and shell and i fell in love again.. i won't go so long again..


shell wanted a pesto pizza with chicken, mozzarella and grapes...


i opted for prosciutto, goat cheese, onion and grapes on my pizza.. it was soooo good!!


to grill a pizza is very very easy!! you make your dough.. you roll out and shape your crust.. you grill your dough on both sides for a few minutes on the grill.. you remove the crust from the grill and top it with what you want and return to the grill until everything is melted and scrumptious.. i didn't get any pictures of the "final" product.. i unfortunately got really sunburned from the lake and had a screaming head ache.. i fell asleep at 7 :(

servings: 2 pizzas

ingredients:

pizza dough (my recipe here.. or you can use pre made dough from your local store or pizza joint)

chicken, pesto sauce and grape pizza

pre made pesto
pre made rotisserie chicken 
1 cup sliced in half red seedless grapes
1/2 cup shredded mozzarella cheese

goat cheese, prosciutto, onion and grape pizza

1/2 cup crumbled goat cheese
2 - 3 slices of prosciutto torn into pieces
1/2 a small onion, sliced thin and sauteed in olive oil
1 cup sliced in half red seedless grapes
olive oil

heat your grill to medium..cut your dough in half and then roll out each one on a lightly floured surface.. (it won't be round at least mine never are. ha) i then placed my dough on a baking sheet lined with parchment paper.. i then carried them out to the grill and placed each dough on the grill.. closed the lid and cooked on medium low for about 3-5 minutes.. flipped them over and cooked the other side with the lid closed for another 3-5 minutes.. remove from grill to your lined baking sheet then add your toppings.. for shell's i added about a tblsp. of pesto.. i spread it around the entire surface of the crust.. then i added mozzarella cheese, i took some rotisserie chicken and kinda ripped it up and added it then added the grapes.. back on the grill close the lid and cook another 5-6 minutes.. when done the crust will be slightly crispy, the bottom a little charred and the cheese melted.. remove from grill to your lined baking sheet.. slice up and enjoy!! for my pizza i brushed the surface of the crust with olive oil added goat cheese, sauteed onions, ripped up prosciutto and tossed on the grapes.. cooking the same as the other pizza.. the goat cheese doesn't really melt so that's ok!! enjoy it's really good and who knew grapes would be so good on pizza!!!

  1. Grapes are good alternative toppings for veggies. It could create a sweet tangy taste to the flavor of the whole pizza. Have you tried using veggies on your pizza? Vegetables are good toppings, as well, and it’s very healthy too. You can grill the veggies directly on the grills and just top them on the pizza afterwards, or mix it directly, whichever you prefer. ->Fresh & Healthy Brands
