spicy cheesy breakfast enchiladas..


not quite sure why i never made these before or why the thought of them never occurred to me.. but pete and i had breakfast at marie calendars the other day and on their menu was breakfast enchiladas.. and well it intrigued me so i ordered them.. and they were pretty fricken good.. and then pete had a bite and pondered one of life's many oddities.. why have we never had these before.. to which i replied.. i dunno.. {yes we are an intellectual couple.. and these life altering conversations between us occur often} but enough about my smarts let's get back to what's really important.. these enchiladas..  i stuffed them with cheese, scrambled eggs that had red peppers and onion  and spicy breakfast sausage.. then topped them with a spicy red enchiladas sauce and more cheese.. a dollop of sour cream and cilantro and kapow!! breakfast enchiladas!! i am serious.. *looking ever so sincere* these were really good.. you gotta try them.. how about tomorrow... it's saturday.. make these and a pitcher of mimosa's or bloody mary's.. and your in like flynn..


cheesy breakfast enchiladas

prep time: 10 minutes
cooking time: 30 -35 minutes
servings: 8

ingredients:

2 tblsp. butter
1 small onion, diced
1 red {or any color} bell pepper, chopped
1 garlic clove, minced
1 16 oz. package of bulk hot breakfast sausage {i used jimmy dean}, cooked until crumbly
8 eggs, slightly beaten
1 tblsp. heavy cream
salt and pepper
2 cup shredded sharp cheddar cheese
16 corn tortillas
1 10 oz. can of hot enchilada sauce {you can make your own i had a can so i used it}
hot sauce
sour cream
cilantro, chopped

preheat your oven to 425 degrees {f}... then in a large skillet over medium heat melt butter, while it's melting whisk your eggs and cream together and add a little salt and pepper, set aside.. once butter is melted saute onion, pepper and garlic until tender.. about 3 minutes.. add cooked sausage.. and cook until heated through about 2 minutes, then pour your egg mixture over everything.. reduce heat and stir and cook until eggs are almost done but still soft.. heat your corn tortillas in the microwave for about 20 seconds to make them easier to work with.. get a casserole dish {i used a 9 x 13} and pour some enchiladas sauce in the bottom just enough to coat.. lift casserole dish and tilt back and forth making sure the sauce coats the entire bottom.. then spoon 1/16 of the mixture down the center of a tortilla then top with a spoon full of cheese and roll up.. add seam side down to the casserole dish.. once they are all rolled up and in the casserole dish then pour the rest of the enchilada sauce over the top and cover with cheese.. bake in the oven for about 20-25 minutes or until cheese is hot and bubbly.. remove from oven and top with a dash of hot sauce,  a dollop of sour cream and little cilantro..serve immediately.. it really is good i haven't steared you wrong yet...
