spicy shrimp 'n grits



not sure why my grits look like scrambled eggs in this photo but they do.. they did not however taste like scrambled eggs.. well according to pete they didn't.. you see i wouldn't eat them.. as much as i love corn.. which i really do.. in high school my afternoon snack was to open a can of corn and eat it right out of the can.. i actually still do it.. like i said i love corn.. i hate, can't stand.. blleeak yuck won't eat hominy.. no clue why i just don't care for it.. but then again i don't like popcorn either so *shoulder shrug* maybe that is related..maybe.. not sure.. but the shrimp was heavenly.. divine if you will.. kinda smoky.. kinda spicy.. kinda bacony.. kinda yummy.. well not kinda definitely yummy... i made it for sunday breakfast awhile ago actually.. like in november.. but didn't post because of the scrambled egg looking grits.. but decided what the heck.. btw i used boxed instant grits.. i know i know your probably cringing trying to get off this page as fast as you can, cursing me.. and for that i am sorry.. but you see i was in the store and they had a box of instant cheese grits and i had shrimp in my basket and well one thing lead to another and i bought instant grits.. i would hide my head in shame but i know the shrimp will make up for any downfall i have for my grit fiasco!! duh it just hit me that's why my grits look like scrambled eggs.. oh lawdy i definitely show my blondness sometimes.. augh anyway.. try it the shrimp is yummy and pete actually said the grits were good too :) i was initially inspired by this recipe here... but then it took on a life of it's own..


spicy shrimp and grits

prep time: 15 minutes
cooking time: 15 minutes
servings: 4

ingredients:

2 packages of instant cheese grits, made according to package directions
salt and pepper
1/4 cup grated parmesan cheese
1 tblsp. unsalted butter
2 slices of bacon, cut into lardons
1 lb. of shrimp, peeled, deveined and rinsed
3 tsp. of smokey hot paprika {more if you want more of the smokey heat}
1 tsp. cayenne pepper
1 large clove of garlic, minced
juice of half a lemon
parsley {garnish which i forgot}

start by making your grits according to package direction once it's cooked remove from stove add cheese and 1 tblsp. of butter.. salt and pepper and cover and keep warm.  while it's cooking cook your bacon in a large skillet.. when it's done and not to crispy remove from skillet with a slotted spoon to a plate lined with a paper towel.. over medium low heat add your shrimp to the pan the bacon was just in.. {if you think there is not much fat in the pan drain some of  it off you want about a tblsp.  if you don't want to use the bacon grease drain it and use a tblsp. of butter}  when your bacon grease/butter is hot add your salt, pepper, paprika, cayenne pepper and shrimp cook until it's almost all the way pink then add lemon juice and garlic.. stir around and make sure the shrimp is evenly coated with the spices.. add bacon back in and cook for another 3-4 minutes until shrimp is cooked through.. divide into 4 portions and serve over cheesy grits..
