spinach~artichoke "dip" bread


i got the idea to make spinach artichoke dip from this recipe here.. it was shells idea to put it on hot crispy bread.. genius if i do say so myself.. it was so good.. i had left over cooked chicken which i added to the dip also and we had a nice little afternoon snack.. you can really do a lot with this little dip.. you could roll it up in chicken and bake it.. or the obvious just serve it all by it's self with crackers or crostini.. again i apologize for the photo my camera is still stuck on "taking bad photos mode" i will fix it this weekend.. but no matter the picture this was very tasty...


spinach~artichoke bread

prep time: 10 minutes
cooking time: 20 minutes
makes about 4 cups

ingredients:

ciabatta rolls, split and toasted
1 can {13 oz} of artichoke hearts, packed in water, drained
10 oz. bag of frozen spinach, thawed and squeezed of all it's excess water
1/4 cup leek, chopped small, white part only
1 clove garlic, minced
1/2 cup low fat greek plain yogurt
1/2 cup low fat sour cream
juice of 1/2 a lemon
2/3 cup parmesan cheese
1 block 1/3 less fat cream cheese
1/4 cup part skim shredded mozzarella
salt and pepper
olive oil

in a medium size pot over medium heat combine everything but parmesan and mozzarella cheeses and stir until cream cheese is melted.. once its all incorporated and melty add mozzarella cheese and stir.. remove from heat and allow to cool a few minutes.. it will thicken up.. split your ciabatta roll and drizzle cut side with a little olive oil, salt and pepper.. toast in a 425 degree {f} oven until slightly crispy.. remove and spread each half with the spinach artichoke dip and sprinkle with parmesan and back in the oven for about a minute.. remove from oven and serve immediately.. you can slice up your bread smaller for appetizers.. or make a meal out of it by adding cooked chicken to your dip.. any way you serve it it will be good.. any leftovers keep in an air tight container in the fridge for up to a week, to reheat you can put in an oven safe dish and heat at 375 for about 20 minutes or use the microwave or stove top..
