a blast from the past.. a toasted cheese tortilla aka tct


i am member of a "growing up in vegas" facebook page and a subject that get's brought up at least once a week is going to macayo's and having their tct.. we would go to the movies at the red rock theaters and then walk down and order tct's.. it was a friday night ritual we had before we had cars and could go other places.. and seeing all the posts and discussions about the infamous tct it was a typical friday night for most of vegas kids.. now it's really a toasted cheese tortilla i mean nothing fancy.. nowadays it would be considered an open faced quesadilla{but back then no one knew about quesadillas}.. anyway the cheese kind was the preferred choice.. but now that i am an adult i get adventurous and add jalapenos or fajita grilled veggies.. maybe chicken or beef.. sometimes refried beans or sour cream.. yummy.. shell turned 18 and we had a mexican fiesta {post on that event wednesday}and i thought tct's would be perfect.. they are simple but so delicious.. happily they were a very big hit!! and brought back fond memories for a lot of the adults at the party..


i cooked it on my pizza stone to get the tortilla extra crispy.. 


toasted cheese tortilla
 
prep time: 5 minutes
cooking time: 10 minutes
servings: 6-8 slices
 
ingredients:
 
1 extra large flour tortilla
1/2 cup shredded cheddar and colby jack cheese mix
 
toppings: diced green chilis, black olives, grilled veggies, pork carnitas, jalapenos {possibilities are endless}
 
directions:
 
pre heat your oven to 350 degrees {f) place pizza stone in oven, if using.. if not using a pizza stone cover a baking sheet with foil...  sprinkle tortilla with cheese and any toppings you might be using.. slide onto pizza stone or place on baking sheet and cook for 10 minutes or until edges start to slightly brown and cheese is melted.. remove from oven and slice with a pizza cutter into wedges.. now you have to have it with sauce and the best sauce to have with it is macayo's smooth red  taco sauce.. you can purchase it here or most grocery stores around here sell it.. i also like to dip mine in sour cream and sometimes i mix the taco sauce with my sour cream.. *sigh* a tct and taco sauce are the greatest snack!!
