refrigerator spicy pickled asparagus


we had planned the other day an early morning lake trip, which i thought definitely needed some of my spicy bloody mary's.. then I came across this pickled asparagus  recipe and knew they were definitely needed for our outing.. they are simple to make but soo freaking good!! :) even if your not putting them in bloody mary's.. in salad or by themselves are just a'ok too!! {I've mentioned before my aversion to "canning" so these are basically refrigerator pickled asparagus, which means they don't have a forever shelf life, they last about 2 weeks in the fridge NOT on your shelf}


spicy pickled asparagus

prep time: 5 minutes
cooking time: 3 minutes
servings: 1 24 oz. jar

ingredients:

1.5 lbs asparagus, trimmed of their woody ends and to fit your jar..
3/4 cup apple cider vinegar
3/4 cup water
1 tblsp. pickling spice
2 cloves of garlic, peeled
3-4 tsp. crushed red pepper
salt

directions:

combine apple cider, water and spice in a small pot and bring to a boil over medium heat.. once boiling turn down to simmer.. fill a pot with water add salt and bring it to a boil, blanch asparagus for 1 minute and remove to an ice bath {basically a large bowl with ice and water}.. let sit in the ice bath for 3-4 minutes.. remove from ice water and add to your jar, add garlic and pour pickling liquid over the asparagus then add crushed red pepper... apply your lid and tighten.. shake it up a little to get everything kinda mingling.. then allow to cool... once cool put in your fridge.. it can keep for up 2 weeks but allow it to sit in the fridge for 24 hours before using..
