TGIF and a frittata..


i love that word.. frittata..  i not only love the word i love them.. they are so good.. i had never made one up til recently.. why i have no idea they are simple, tasty and can make an elegant brunch meal or even a lazy sunday breakfast.... i was inspired by skinny tastes light swiss chard frittata recipe found here.. however i made mine a little differently because of what i had on hand.. bacon, caramelized onions, spinach and swiss is what i used.. :) super yummy.. there are so many flavor combinations you can make it's endless.. i think this weekend i will use whatever veggies i get in my bountiful basket.. i would definitely say this is a perfect meal to use veggies left in your crisper before they go bad.. i can't wait to make this again!!

prep time: 10 minutes
cooking time: 30-40 minutes
servings: 4

ingredients:

4 large eggs
4 egg whites
1/4 cup grated swiss cheese
2 huge handfuls of spinach, rinsed well
1 onion, sliced thin
2 slices of bacon, diced
salt and pepper to taste
chopped scallions

preheat oven to 400 degrees (f).. in a medium bowl combine eggs, egg whites, cheese and a pinch of salt and pepper.. set aside..

heat a 10 inch iron skillet on medium low.. cook bacon down.. to translucent but not crispy.. about 3-4 minutes.. add the onions.. add salt.. slowly cook onions, stirring occasionally until the onions become translucent.. about 8-10 minutes.. bring the heat up to medium and cook another 3-4 minutes.. add your spinach and cook until wilted.. about 2-3 minutes..add salt and pepper.. reduce heat to low and pour in egg mixture.. salt and pepper again.. (your adding layers of flavor)  cook until the edges start to set about 8-10 minutes.. once the edges set sprinkle with chopped scallions and put in the oven and bake until completely cooked through (the top won't jiggle anymore) about 5-7 minutes.. remove from oven and slice and serve with sliced tomato.. and maybe a mimosa or bloody mary.. :)
