apple tart with a pineapple-apricot brandy glaze



so i got a little bit of happy shock today!! i checked my stats.. something i very rarely do.. i actually didn't know you could until recently ha..but anyway i checked them today and holy guacamole there has already been over a 100 views today and it's not even noon.. wow.. color me shocked! well at least now i know others come to my page other than my mother.. unless she was really bored this morning and viewed the page 100 times!! stranger things have happened.. but anyway thank you all for joining us today and i hope you enjoy the recipes!! leave me a note or comment if you have any questions or suggestions!!

this weekend is father's day and for the past 8 years we have always gone to the lake on father's day.. unfortunately our boat is broke and in the shop. boohoo.. so i think sunday we will grill steaks.. hang out and maybe swim at my brother in laws house.. you see he lives on door up from us so it's quite convenient!!

a few weekends ago we had family over and had a bbq.. i got a boatload of apples in my bountfiul basket that weekend and decided to make a tart.. it turned out so good!! but so simple it's almost embarrassing.. so maybe try it this weekend if your going to a bbq or having one of your own.. sure to impress!!

when looking for the type of tart i wanted to make i found this recipe here.. and then this one here.. neither one exactly what i wanted so i then improvised.. and the result was delish!!



apple tart with a pineapple-apricot brandy glaze

prep time: 15 minutes
cooking time: 40-45 minutes
servings: 1 - 9 inch tart

ingredients:

6 medium sliced apples (i used gala because that's what was in my bountiful basket) (they always say to peel them i never do but it's up to you)
2 tblsp. unsalted butter
1/4 cup white granulated sugar
2 tsp. fresh lemon juice
1 tsp. freshly grated lemon zest
1 tsp. cinnamon
1/4 tsp. ground nutmeg
1 pre made package refrigerated pie dough (the box usually comes with 2 only use 1)

for glaze:

1 tblsp. of apricot jam (my recipe here..)
1 tblsp. of pineapple preserves ( i had some leftover from easter)
1 tblsp. brandy (or cognac, rum or water)

melt butter in a large skillet over medium heat.. add sugar and cook about 2 minutes until the sugar has dissolved.. stir in apples, lemon juice, zest, cinnamon and nutmeg.. cover, reduce heat and cook for about 15 minutes or until apples are tender.. stir occasionally.  when done remove from heat and allow to cool.. preheat oven to 400 degrees (f).. i used a scalloped tart dish and sprayed it with a little pam.. then took my dough and formed it to fit the dish..arrange apples in dough ... sprinkle with a little sugar and bake for about 40-45 minutes..when you have about 15 minutes left place apricot jam, pineapple preserves and rum in a small microwave safe bowl and zap for 30 seconds.. or until bubbly.. then brush on the top of the tart and cook the remaining 15 minutes... remove from oven.. let sit about 10 minutes before serving.. cut into wedges and serve warm or at room temp.. vanilla ice cream is stupendous with it!!
