mother's day brunch and then a bbq with spicy apricot chopped pork sandwichs..
happy mother's day to all you mother's out there.. i hope your day was special.. i woke up to this little note and 2 cute pairs of shoes and a shirt, which i wore to brunch..
every year, ohh since i was about 10 i am guessing, we have gone to the country club for brunch.. my mother and i really look forward to it.. jake didn't get to go this year he had to work.. boo.. but i understand.. boy's growing up and has responsibilities.. so he came over for the bbq back at our house..
when grandmommy was alive it was her favorite day of the year.. even over her b day.. because she got to dress up in her best and wear her best jewelry and get flowers and have a little mimosa at the club and it was such a social event.. so we had to go visit her and leave her a corsage..

now on to the bbq.. after the brunch we went back to the house to relax.. then pete's parents and the kids came over for a bbq.. sadly there are no pictures of the food or the guests for that event :( shell was uploading photo's to facebook and well we forgot to take pictures.. but the chopped pork was super yummy so i will give you the recipe..!! now i have said previously that i don't like things cooked in the crock pot... this is an exception.. i really enjoy bbq pork and i didn't have much of a choice seeing as how we were going to be gone most of the day, yet having people over for dinner.. sometimes, really the crock pot is the only way to go.. not to mention tina gave me 3 huge bags of apricots from her tree.. so be looking forward to jam, chutney anything else i can think of to make out of apricots!!

apricot chopped bbq pork..
prep time: 10 minutes
cooking time: 8-9 hours
servings: 10
ingredients:
6-8 lbs. pork tenderloin
bbq rub (recipe to follow)
6 seeded and sliced apricots
1 small onion, sliced
1 small jalapeno, seeded and sliced
1 bottle of your favorite bbq sauce
tobasco
add to the bottom of the crock pot your onions, apricots and jalapenos.. rub your spices all over the pork and place it on top of the onions, apricots and jalapenos.. cook on low for 8 hours... after about 6 hours baste the top of the roast with the juices in the crock pot.. after about 8 hours remove your roast from the crock pot, discard all the juices, onions, apricots and jalapenos.. slice then chop of the roast. put back in the crock pot add your bbq sauce and several dashes of tobasco, combine and turn to low for another 30 minutes to an hour.. serve on buns with extra sauce and a crisp slice of purple onion or cole slaw.. i also made a fruit salad out of watermelon, pineapple, apricots, bananas and mangos.. chopped them all up right before serving.
spice rub:
1/2 tbls. chili powder
2 tsp. cumin
2 tsp. cumin
2 tsp. onion powder
2 tsp. garlic powder
1 tsp. cayenne
1/2 tbls. smokey paprika
2 tsp. pepper
2 tsp. salt
mix all together and rub all over your pork tenderloin any left overs keep in an air tight container..
