round two tuesday.. philly cheese steak frittata {made with left over rib eye}


for dinner saturday night i made grilled rib eye and it was so good.. the next morning for breakfast i decided to use the left over steak and make a philly cheese steak frittata.. it was an excellent use of the left overs.. very filling and quite tasty.. it was so nice out we sat in the back porch and had breakfast and planned our day..


philly cheese steak frittata

prep time: 10 minutes
cooking time: 30-40 minutes
servings: 4

ingredients:
 
left over steak cut up into bite size pieces, about 3/4 of a lb.
4 large eggs
4 egg whites
1/4 cup grated cheddar cheese
1 onion, diced
1 green pepper, diced
salt and pepper to taste
olive oil

preheat oven to 400 degrees (f).. in a medium bowl combine eggs, egg whites, cheese and a pinch of salt and pepper.. set aside..

heat a 10 inch oven proof skillet on medium low.. heat two twirls around the pan with olive oil over medium heat.. add onions and green peppers.. add salt.. slowly cook onions and peppers, stirring occasionally until the they become translucent.. about 7-9 minutes.. bring the heat up to medium and cook another 3-4 minutes....add salt and pepper.. reduce heat to low and pour in egg mixture.. salt and pepper again.. (your adding layers of flavor) cook until the edges start to set about 8-10 minutes.. once the edges set put in the oven and bake until completely cooked through (the top won't jiggle anymore) about 5-7 minutes.. remove from oven and slice and serve with sliced tomato.. and maybe a mimosa or bloody mary.. :)
