take my word for wednesday.. roasted butternut squash pizza w/ bacon and caramelized onions is da'bomb!!

  

my kids really hate it when i use words like da'bomb, rad, totally cool, bitchen, etc.. you get the idea.. shell told me the other day i was to "oldddddddddddddddd" for instagram.. i think they think i am ancient.. i am 46.. when did that become ancient? so to appease {or tease} my kids i say totally hip and funky words all the time now, i even throw in a few gang signs and hip movements too {i have a feeling they are plotting to have me committed}.. but even being as hip and rad as i am .. i eat my veggies and right now roasted butternut squash is my new fav.... i have been using it in everything.. i've made roasted butternut squash risotto, this pasta w/ roasted butternut squash and leek sauce and last but certainly not least this butternut squash ravioli in a brown butter sauce.. yummmmm to all three.. i roasted some up the other day and just ate it.. for no special reason.. no meal.. no reason other than i wanted it.. now i have in the past complained about the whole cutting, peeling and cubing thing.. but i got a new peeler and it wasn't so bad this last time..

i also love love love pizza {i know i have said that so many times before but i really do} and if you search pizza on this site you will see how much i love it.. when i find a new food item i like i always think will this go good on a pizza.. and in my mind butternut squash does.. holy cow it was good.. try it.. i mean like seriously try it.. it's totally tubular dude.. {aka it was very pleasing to the palate}


roasted butternut squash pizza with bacon and caramelized onions

prep time: 15 minutes
cooking time: 1.5 hours
servings: 2 pizzas

ingredients:

pizza dough, cut in half, {my go to recipe that i use can be found here or a pre made pizza dough from the store is fine}
2 cups of fresh grated mozzarella cheese
1/2 whole butternut squash, peeled, seeded and diced
1 onion, sliced thin
3 slices of bacon, cut into lardons
olive oil
fresh cracked black pepper
salt
1 tsp. chili powder
parsley for garnish

heat your oven to 375 degrees {f} and line a baking sheet with foil or parchment paper.. lay your cubed butternut squash in a single later out.. drizzle with olive oil and then salt, pepper and chili powder.. bake for about 30-40 minutes or until your squash is a golden brown and tender, but not falling apart.. then crank your oven to 500 degrees {f} for 30 minutes with your pizza stone in the oven.. while it's heating up get a medium saute pan and cook your bacon until cooked but not crispy.. remove with a slotted spoon to a paper towel lined plate and set aside.. add your onions to the bacon grease left in the pan and continue to cook over  medium heat until onions tender and caramelized.. now cut the pizza dough in half and roll out each 1/2 of the dough on a floured surface to the thickness your family likes.. slide the pizza dough on to a piece of parchment paper..brush olive oil all over dough and then add your fresh cracked black pepper.. now it's time to sprinkle your mozzarella {1 cup each pizza} then add roasted butternut squash, onions and bacon over cheese. now pick up parchment and pizza and slide gently onto pizza stone.. bake until lightly brown and cheese is melted.. about 6-7 minutes.. but keep an eye on it the thin pizza cooks up pretty fast.. remove from oven and allow to cool for about 3-4 minutes. slice and serve.. sprinkle with parsley before serving..
