take my word for it wednesday.. roasted asparagus is the easiest tastiest veggie ever..
this is by far the easiest recipe ever.. my mom told me about this recipe a good 15 years ago when she was reading a suzanne somers recipe diet book and i have been making it the same way ever sense.. i could eat an entire bunch by myself if allowed.. so could jake... we fight over who gets the most.. cooked this way it tastes almost like candy to me...i make this at least once a week.. and if there is any left over, which is a rare occasion, but it sometimes does happen, i like to make roasted asparagus pizza.. for a change of pace i do like this prosciutto wrapped asparagus.. but normally this very simple roasted recipe is my fav..
roasted asparagus
prep time: 5 minutes
cooking time: 20 minutes
servings: 4 for most families 2 for mine..
ingredients:
1 bundle of asparagus
olive oil {about 2 tblsp}
salt and pepper
instructions:
preheat your oven to 400 degrees {f}.. prep asparagus by removing the woody end of the stalk.. spread out entire bunch in an even layer on a lined baking sheet.. drizzle with olive oil and salt and pepper.. roll them around to make sure they are evenly coated.. roast in the oven for about 6-7 minutes then remove from oven and with a spatula or tongs flip the asparagus over and again put back in the oven and roast another 10 minutes.. keep watching you want them tender and slightly caramelized but not burned.. {i do every now again like to cook them an extra 10 minutes and they are crispy.. i call them asparagus chips..} remove from oven when tender and serve immediately.. i sometimes like to sprinkle with fresh grated parmesan too.. or a squeeze of lemon.. be creative..
