a day at the lake..


it was beautiful all weekend so we laked it up..the first day we had all the kids and the second it was just us with tina and lo.. i was packing the cooler and snapped a few photos and thought i would show what we bring to the lake.. i made chicken salad, (recipe below), i brought crackers and made sandwiches on honey wheat berry bread, i cut up cucumbers, carrots and celery and made ranch dressing (not shown), then i cut up watermelon, mango, grapes, blue berries and pineapple and tossed them all together and the kids really enjoyed that.. it was about 108 and  so the cold fruit was refreshing.. ohh and don't forget the lime wedges for bloody mary's and olives (not shown) for those blood mary's!!



lake chicken salad

1 rotisserie chicken
1 small onion, minced
2 celery stalks, minced
1/4 cup mayo (more if you like yours that way..)
1/4 cup non fat greek yogurt
juice and zest of 1/2 a lemon
1 tblsp. oil and vinegar dressing
1 tblsp. chopped chives
1 tblsp. relish
salt, pepper and crushed red pepper

i tore apart my rotisserie chicken.. i took the breasts and ran them through the food processor and chopped the rest of the chicken up into bite size pieces.. i then ran the onion and celery through the food processor too..in a large mixing bowl i added the chicken, onion, celery and remaining ingredients.. tossed until well combined..jake said it was the best chicken salad he has ever had.. now granted it was 108 and he was starving he might have just said that.. ha ha :) but it was pretty good..


it wasn't windy in the morning so the kids wanted to tube..


pete usually tires to get the kids to fly off he couldn't get jake to fall off so jake finally had to stop tubing from sheer exhaustion..

then bamo they hit a wake and went flying!! everyone was ok they couldn't stop laughing!!



we stopped and hung out in a cove tina snapped a few photos of the desert big horn with her phone.. there was a family of about 20 and they came right down and drank from the lake..


we had to stop and get gas and this was the gas station it was crazy.. our boat is the one behind the red truck (we call it clifford for the big red dog)


here was the cove we stayed in it's called quiet cove.. it was so peaceful..

the boys speared fish i will try and get photos of that tina took some with her iphone with a water protector over it.. the above photo's the photo above was taken with my phone while sitting on the swim step..
