grilled pork chops with peppered parmesan potatoes


first let me apologize for the photo!! i didn't plan on taking any pictures but then at the last minute decided too..now this meal is one of those that wasn't planned i had planned on grilling the pork chops and making a nice salad and grilled asparagus.. well that all went out the window.. the asparagus was slimy the lettuce wilted and it was 100+++++ degrees outside and i wasn't about to stand outside and cook.. this is what my temp gauge said when i got in my car to come home that afternoon..

so needless to say being outside was not where i wanted to be.. i used my grill pan inside and grilled them .. i had a head of purple cabbage i cut into quarters drizzled with olive oil and salt and pepper and cooked those in a 400 degree oven for about 30 minutes.. then i realized i wanted something else.. so i took about 5 white new potatoes cut them into chunks drizzled with olive oil a ton of pepper (by mistake the lid came off but they were awesome) and some parmesan cheese baked them in the oven with the cabbage for about 45 minutes.. they were so yummy.. sometimes the meals we don't plan are the ones that come out the best.. so just get cooking don't worry about it!!



grilled pork chops

prep time: 5 minutes
cooking time: 10 minutes
servings: 4

ingredients:

8 pork chops, end cut
2 tablespoons olive oil
2 tablespoons italian seasoning
salt & freshly ground black pepper

brush the pork chops with the olive oil.. then sprinkle with the seasoning.. get your grill pan heated to about medium high and cook the pork chops until cooked through about 4-5 minutes each side.. remove from griddle when done and let rest about 5 minutes before serving..


roasted peppered parmesan potatoes

prep time: 10 minutes
cooking time: 45-50 minutes
servings: 4

ingredients:

 2 lbs. white potatoes cut into 1 inch pieces
1 tblsp. pepper
2 tblsp. grated parmesan cheese
olive oil
salt

heat your oven to 400 degrees (f),in a large roasting pan put your potatoes.. drizzle with olive oil then sprinkle with salt, pepper and parm.. toss with your hands to get them well coated.. roast for about 20 minutes then remove and stir them around so they get golden brown and crisp on all sides.. then put back in the oven for another 25 - 30 minutes..  remove and serve immediately..
