so nice i am posting twice.. no bake s'more casserole aka ice box cake..

my sis in law, carey has made my no bake s'more casserole aka ice box cake, recipe here.. at least 4-5 times already she said she isn't sure if she wants to kiss or kick me!! here is a picture of hers.. it's addicting!!



my niece made it for a fourth of july pool party and said everyone loved it.. here is her picture..


no bake s'more casserole

prep time: 15 minutes
chill time: 2-3 hours before serving (preferably overnight)
servings: 20 (it's so rich small pieces are best here)

ingredients:

1 box graham crackers
2 tubs of marshmallow creme 7 oz. (i used the $1.00 each generic brand from walmart and worked out great)
1 tub of cool whip (not frozen.. i left mine out for 15 minutes before using)
2 tsp. vanilla
1 bag of semi sweet chocolate chips
1 cup of heavy whipping cream
1 tsp. salt

start by making your marshmallow center.. mix your marshmallow creme with the cool whip until smooth and creamy.. might take a little elbow grease.. (**UPDATE: i have been told it's easier to use a hand mixer or counter mixer to mix the marshmallow and cool whip**) once it's smooth and creamy add your vanilla and mix to combine.. then line the bottom of a 9 x 13 casserole baking dish with some graham crackers.. i had to break some of them up them to fit..spread one-third of the marshmallow whip evenly over the graham crackers.. top with a layer of graham crackers then marshmallow again.. continue until you end up with a layer of the marshmallow on top.. make your ganache.. over medium low heat melt chips and cream until smooth.. keep stirring and once the chocolate is completely melted and the 2 ingredients are well combined turn heat off. add salt and about every 5 minutes whisk the chocolate.. for about 5-20 minutes..it had cooled but was still pourable.. i poured it over the top.. then i picked up the casserole dish and tilted it back and forth coating the entire top.. i put uncovered in the freezer for about 30 minutes.. i wanted the chocolate to set up so i could cover and it wouldn't stick.. i then removed from freezer covered and put in the fridge over night until the party.. i did not remove from fridge until ready to serve.. your first piece will be hard to get out but the rest came out perfect!! :)

  2. You say the first piece was hard to remove. I think if you use graham cracker crumbs instead with butter, it might remove easier when finished. You would have to let it cool most likely before you poured the marshmallow cream on. Sound delicious though, gonna try it another day. Thanks for posting.

  3. Good idea Mary G.. :) and Shelie I was actually thinking of making a version with a graham cracker crust then pourting the chocolate then a vanilla marshmallow creme "frosting" then sprinkling with more graham crackers and chocolate shavings.. :)

  6. look for paula deen's eclair cake,,, pudding not marshmellow. also if you use canned frosting nuke for 15 sec stir and top easier than choc & cream

  10. My grandma makes this, except that instead of marshmallow creme and cool whip, she uses instant vanilla pudding, it's called chocolate eclaire cake in my family :) Delicious!! Always a must have at any of our family functions!

  11. I'm sure these are delicious in their own way but what makes a s'more a s'more (in my humble opinion) is the fire roasted marshmallow taste with the melting chocolate and graham crackers ;-)

  13. The pudding is very commonly used for eclairs. THIS version is called "s'mores" and you certainly can't call it a s'more without marshmallow! :)

  14. This recipe was a HUGE hit! It's good for a block party or feeding lots of kids at once. I did want to say that the 1 tsp of salt in the chocolate topping, for me, was too much. Next time, I would start with a 1/2 tsp or less and add more if needed.

  17. I lightly sprayed the bowl, mixer attachment and spatula with cooking spray and it was much easier to work with. Also spread in pan with a butter knife, taking my time. I cut back on the salt to 1/2 tsp...family loved this!
