caramelized onion horseradish dip and a birthday party...
today is shelby's birthday!! she is 17.. *sigh* she is my baby.. i am hyperventalating today.. one more year and she is 18.. i will soon be an empty nester.. shelby is, as you can see, my wild child.. always has been ever since she was born.. once when she was three she told me to talk to the hand because her face didn't want to hear it.. i was flabbergasted and yet impressed with this strong willed creature.. to say the least these last 17 years have been a roller coaster ride would be understatement yet i wouldn't change a moment of it. it's made her who she is today.. we couldn't be more proud of her.. love you kid.. now on to her birthday party..
this year she was very easy on her dear old mom.. she wanted capriotti sandwiches, my macaroni salad, chips and cupcakes from the cupcakery.. i don't think i have ever had a party at my house or event where i had to do so little.. and guess what it was wonderful.. he he i might have gotten spoiled..it was so easy..
i bought 5 different kinds of sandwiches.. if you haven't had capriotti's they are amazing.. i recommend the bobbie!!
i ordered cupcakes.. red velvet, omg ganach, chocolate freckle and lemon.. sooooo freakin good!!

this dip was ahhhmazing.. creamy.. spicy.. loveliness..the recipe was inspired here..
caramelized horseradish onion dip
prep time: 10 minutes
cooking time: 30 minutes
servings: about 2 1/2 cups
ingredients:
olive oil
2 cups chopped sweet vidalla onion (about 1-2 onions)
2 tblsp. balsamic vinegar
salt and pepper
1 cup low fat sour cream
1/2 cup low fat greek plain yogurt
1/2-1 tblsp. prepared horseradish
1 tsp. worcestershire sauce
1/2 tsp. garlic powder
1 tsp. cayenne pepper
heat olive oil.. 1-2 twirls around the pan.. over medium/high heat in a saute pan.. add chopped onion and cook until translucent and starting to color.. about 10 minutes..stir in vinegar, salt and pepper.. lower heat and cook gently, uncovered, for about 25 - 30 minutes, stirring occasionally, until the onions are nice and caramelized.. then set aside.. let cool a bit before adding other ingredients.. in a medium mixing bowl, mix together all the ingredients and stir until smooth.. chill until ready to serve.. serve with crackers or potato chips.. personally ruffles is the best!! ha :) enjoy!!
