sweet pickle dip..

a few months back i hosted bunco at my house and it was a pot luck and someone brought pickle dip.. you brought what?? pickle dip.. what in the world is pickle dip and why have i never heard of this?? let me try.. and ohh boy did i like it.. i changed mine up a bit from the one i actually tried because while a crisp kosher dill spear is a must with a reuben sandwich i am not a lover of dill pickles per say.. i am more of a sweet pickle kinda gal.. and the reaction from everyone who came over was that this is a keeper.. it was definitely good..

now of course i am a dork.. but what else is new.. i bought a jar of sweet pickle gherkins and ran them through my processor then while standing there at my creation shell zips by and says hmm why did you make relish?? oh umm yeah i just did make relish.. *eyeroll* so you don't have to do what i did.. i would just buy relish next time..

sweet pickle dip

prep time: 5 minutes

8 oz of 1/3 less fat cream cheese, room temperature
3/4 cup relish
1 tbls. worcestershire sauce
1 tsp. tobasco

combine everything until creamy.. i put it in the fridge for a few hours before the party and then took it out to come to room temperature about 1/2 an hour before.. i served with crackers.. (if you want more creamy and less "cheesy" i was told to use pickle juice to thin it out)

fun news!!! check out bobby's kozy kitchen i have a featured recipe again.. :) thanks bobbi.. also excitng news.. remember when i told you that www.allfreecasserolerecipes.com (my recipe can be found here..) had featured one of my recipes?? well they got such a great response they are going to publish it in an e-cook book.. how fun is that!! :)
