happy national s'more day!!! s'more casserole aka ice box cake..

happy national s'more day!! in honor of this auspicious occasion i give you (yet again) my s'more casserole aka ice box cake!!


this little concoction is so freaking good.. it's gooey, it's chocolaty.. it's creamy.. it's luscious.. it's fanfrickentabulous!! :)

no bake s'more casserole

prep time: 15 minutes
chill time: 2-3 hours before serving (preferably overnight)
servings: 20 (it's so rich small pieces are best here)

ingredients:

1 box graham crackers
2 tubs of marshmallow creme 7 oz. (i used the $1.00 each generic brand from walmart and worked out great)
1 tub of cool whip (not frozen.. i left mine out for 15 minutes before using)
2 tsp. vanilla
1 bag of semi sweet chocolate chips
1 cup of heavy whipping cream
1 tsp. salt

start by making your marshmallow center.. mix your marshmallow creme with the cool whip until smooth and creamy.. might take a little elbow grease.. (it works great with a mixer of a with stand mixer) once it's smooth and creamy add your vanilla and mix to combine.. then line the bottom of a 9 x 13 casserole baking dish with some graham crackers.. i had to break some of them up them to fit..spread one-third of the marshmallow whip evenly over the graham crackers.. top with a layer of graham crackers then marshmallow again.. continue until you end up with a layer of the marshmallow on top.. make your ganache.. over medium low heat melt chips and cream until smooth.. keep stirring and once the chocolate is completely melted and the 2 ingredients are well combined turn heat off. add salt and about every 5 minutes whisk the chocolate.. for about 5-20 minutes..it had cooled but was still pourable.. i poured it over the top.. then i picked up the casserole dish and tilted it back and forth coating the entire top.. i put uncovered in the freezer for about 30 minutes.. i wanted the chocolate to set up so i could cover and it wouldn't stick.. i then removed from freezer covered and put in the fridge over night until the party.. i did not remove from fridge until ready to serve..
