i got this amazing red pepper fettuccine in the mail from my foodie pen pal the other day.. that post can be seen here.. and i was thinking what would highlight the red pepper flavor and i started thinking about the spicy cajun shrimp with chorizo i made.. that recipe can be found here.. and i knew it would, with a few tweeks, be perfect with the red pepper fettucine..
now your looking at the photos and thinking umm robin we dont see any shrimp.. what the heck! well there is a reasonable explanation.. i bought crappy shrimp and they shrunk up to nada like little bay shrimp.. weirdest thing.. but whatcha gonna do.. it still tasted good.. i had been looking forward to nice big succulent shrimp and well that didn't work out.. but thankfully it was flavorful..
spicy cajun bbq shrimp with red pepper fettucine
cooking time: 20 minutes
2 lbs. fresh shrimp, peeled and deveined
6 tblsp. ketchup
4 tblsp. olive oil
2 tblsp. worcestershire sauce
juice and zest of whole lemon
2 tblsp. fresh chopped parsley (extra for garnish)
2 tsp. cayenne pepper
4 tsp. hot-smokey paprika
3 tsp. liquid smoke (hickory)
2 tsp. tobasco
2 tblsp. garlic powder
2 tblsp. tony chachere's cajun seasoning
1 package of red pepper fettucine
peel and devien your shrimp.. add all other ingredients except fettucine to a medium bowl and whisk.. then add shrimp to bowl and toss to coat.. marinade it for 4-24 hours... when your ready to cook everything.. make fettucine according to package directions, drain and set aside.. meanwhile in a large saute pan or wok over medium/high heat.. cook shrimp until no longer pink this will happen quick.. add pasta and mix well.. turn heat to low and let simmer for about 15 minutes, making sure to stir every few minutes or so.. when done sprinkle your extra parsley on top.. and serve immediately!!

my niece and her hubby welcomed their baby boy, who by the way looks just like his daddy, into the world yesterday.. unfortunately and with much sadness they also received devastating news.. dean's father while on his way to the hospital to see his first grand child was in a car accident and killed. please keep these amazing kids in your prayers and thoughts...
