chili dawgs..

i need to stop watching diners drive ins and dives.. it's my favorite.. i watch it on repeat when they show it on the weekend.. problem is i see what guy is eating and i want it.. like right then.. i wanted chili dawgs so bad i sent shell to the store on sunday to get the stuff to make it.. to heck with what was already on the menu.. i wanted chili dawgs!!!


i know what your thinking chili dawgs aren't the healthiest items on any menu.. but i did make mine on the healthier side.. i used turkey cheddar dogs, turkey chili (no beans), wheat buns and 2% cheddar cheese.. soooooooooo it's technically not artery clogging.. which made me happy.. i got my fix yet didn't have all the guilt.. well maybe just a smidge, but not enough to not devour them in 3 seconds flat.. yes sometimes my manners aren't up to my aunt nezzi's expectations.. and chili dawgs are one of them..


plus they are so simple to make.. and every now and again having food that reminds you of childhood is good, therapeutic in fact.. (didn't know i was a therapist did'ya..) so this weekend indulge yourself.. having a childhood favorite meal.. you'll feel better.. i know i did..


chili dawgs

prep time: 10 minutes
cooking time: 30 minutes
servings 4: 2 dawgs per

chili

1 lb. ground turkey (use beef if you prefer)
1/2 small onion, diced small
1 can of ro-tel mild diced tomatoes
1 can tomato paste
1 tblsp. worcestershire  sauce
1 tblsp. chili powder
1 tsp. cumin
1 tsp. ancho chili powder
2 tsp. garlic powder
2 tsp. onion powder
1 tsp. chipolte chili powder

assembly:

8 turkey dogs with cheddar
8 wheat buns
diced onions, optional
shredded cheddar cheese,optional
diced pickled jalapenos, optional

in a medium pot over medium high heat cook turkey until no longer pink.. add onions and let them sweat for about 3-4 minutes.. add tomato paste and mix around until well incorporated.. then add the remainder of the chili ingredients.. mix well and turn heat to simmer and let simmer for about 30 minutes.. once heated through and all the flavors are well incorporated.. cook your hot dogs and this may be a preference thing.. so however you like to cook them is what you should do.. what i do is take a medium saute pan add enough water to cover the bottom of the pan cook over medium heat and add dogs flipping over every few minutes once the water has evaporated the dogs will start to blister in the pan.. i then cut a slit down the center and fold out and cook the inside of the hot dog also (not cutting in half they are still connected) then i take my buns wrap in a paper towel getting my hands a little wet and sprinkle the water on the paper towel and then zap in the microwave for 20-30 seconds..remove from microwave.. split bun slightly add dog, then chili, then cheese, onion and finally jalapeno.. and then scarf that sucker down..make sure to have plenty of napkins..

variations: i sometimes use pepper jack cheese.. or i add coleslaw also with the chili.. or even sometimes mustard with the chili.. how do you eat your chili dog??? share maybe i might like it.. :)
